Modern day wheat contains 42 chromosomes.
Different kinds of wheat have been crossed over again and again to produce certain characteristics.
Things like higher yeilding crops, faster growing, and high gluten content. All of which can inhibit our health.
Unless it’s organic or verified non-GMO, wheat is genetically modified. No question about it.
So many health issues can stem from consuming GMO wheat. Digestive issues, weight gain, loss of sleep etc. are all known symptoms.
In our home we choose to eat Einkorn flour, if/when we eat flour. Einkorn flour is always organic (or should be to be authentic), and is the original wheat grain.
Einkorn flour contains only 14 chromosomes, unlike modern day wheat.
Here’s the recipe for a great huckleberry pie!
3 cups of Einkorn flour, 1 cup cold butter, dash salt: cut together then use hands to form into two balls.
Roll out one ball on floured surface and place in bottom of pie plate.
Add 4 cups of rinsed huckleberries. Dash some flour on top and dot with butter. Drizzle about 1/4-1/2 cup of honey on the berries.
Roll out the remaining pie crust into a rectangle and slice into strips. Weave on top of pie.
Bake in the oven at 425° F for 40 min or until berries are cooked to your liking and crust is golden brown.
